Ingredients:
- 2 tablespoons olive oil
- 1 clove of garlic, minced
- 1/4 cup chopped red onion
- 2 cups of tamarind pulp
- 1 piece of marinated chipotle chili
- 1 tablespoon MONK
- 1 pinch of salt
- 1 pinch of pepper
Preparation:
- Heat the olive oil in a frying pan, cook the garlic, onion and tamarind pulp and let it come to a boil.
- Lower the heat, add the chipotle chili in adobo and the MONK. Cook for 5 minutes and cool slightly.
- Blend the sauce until you obtain a homogeneous and smooth mixture. Return to the pot and cook over low heat for 10 minutes. Season with salt and pepper.
- Serve hot or cold.
